A hearty and nourishing staple from central Kenya, Mukimo is a beloved comfort food made by mashing together potatoes, maize and greens. This elevated version includes optional flavor boosters to bring out even more depth and aroma.

Ingredients:
• 1 kg Irish potatoes, peeled and chopped
• 1 cup boiled maize (fresh, roasted or frozen)
• 1 cup green peas
• 2 cups pumpkin leaves, spinach or terere (amaranth greens), chopped
• 1 small onion, finely chopped
• 2 tbsp cooking oil or butter
• Salt, to taste

Instructions:
1. Boil the Potatoes
In a large pot, boil the potatoes in salted water until soft and fork tender.

2. Prepare the Greens
While the potatoes cook, boil your chosen greens for 3-5 minutes until tender. Drain then blend or pound lightly for a smoother consistency. Set aside.

3. Combine & Mash
Drain any excess water from the potatoes, then add in the boiled maize, peas and prepared greens. Mash everything together using a wooden spoon (mwiko) or masher until well combined.
The texture can be smooth or lightly chunky whichever you prefer.

4. Flavor Infusion
In a separate pan, heat the oil or butter, then sauté the onions until golden. Add garlic, chili and cumin (if using) and cook for 1-2 minutes. Stir the aromatic mixture into the mash. Crumble in the stock cube (if using) and mix until evenly incorporated.

5. Serve Hot
Mukimo pairs beautifully with beef stew, Nyama Choma, fried eggs or on its own with a side of kachumbari. For a richer taste add a drizzle of ghee or a squeeze of lemon just before serving.

Tips & Variations:
• Swap in sweet potatoes for a subtle sweetness.
• Used roasted maize for a smoky edge.
• Store leftovers in an airtight container and reheat with a splash of water to keep it moist.
