  • 1 medium Red onion, thinly sliced.
  • 2 cloves Garlic, minced

Instructions

Step 1: Roast the sweet potatoes

Preheat your over to 200c (390F). Toss sweet potato cubes with olive oil, paprika, cumin, cinnamon and salt. Spread evenly on a baking tray and roast for 25-30 minutes, flipping halway, until golden and tender.

Step 2: prepare the creamy Sukuma wiki

Heat coconut oil in a large skillet over medium heat. Sauté onions for 2-3 minutes then add garlic and ginger. Cook for another minute. Add tomatoes and cook until soft and pulpy.
