A hearty and nourishing staple from central Kenya, Mukimo is a beloved comfort food made by mashing together potatoes, maize and greens. This elevated version includes optional flavor boosters to bring out even more depth and aroma.

• Kilo 1 viazi za Kiayalandi, zilizopigwa na kukatwa
• Kikombe 1 cha mahindi ya kuchemsha (mabichi, ya kukaanga au yaliyogandishwa)
• 1 kikombe cha mbaazi ya kijani
• Vikombe 2 vya majani ya malenge, mchicha au terere (wiki ya amaranth), iliyokatwa
• Kitunguu 1 kidogo, kilichokatwa vizuri

Maagizo:
1. Chemsha Viazi
Katika sufuria kubwa, chemsha viazi kwenye maji yenye chumvi hadi laini na upole.
2. Tayarisha Greens
While the potatoes cook, boil your chosen greens for 3-5 minutes until tender. Drain then blend or pound lightly for a smoother consistency. Set aside.
3. Kuchanganya & Mash
Drain any excess water from the potatoes, then add in the boiled maize, peas and prepared greens. Mash everything together using a wooden spoon (mwiko) or masher until well combined.

4. Infusion ya ladha
In a separate pan, heat the oil or butter, then sauté the onions until golden. Add garlic, chili and cumin (if using) and cook for 1-2 minutes. Stir the aromatic mixture into the mash. Crumble in the stock cube (if using) and mix until evenly incorporated.
5. Kutumikia Moto
Mukimo pairs beautifully with beef stew, Nyama Choma, fried eggs or on its own with a side of kachumbari. For a richer taste add a drizzle of ghee or a squeeze of lemon just before serving.
